Kardoen

Ik denk dat we er op dit moment een stuk of 20 nog hebben. De bloemen bloeien sinds een week of 2 denk ik, echt prachtig, al die paarse koppen, die zo kort maar zo mooi staan te schitteren. 

I think we have about 20 left at the moment. I think the flowers have been blooming for a week or two, really beautiful, all those purple heads, which shine so beautifully for such a short time. 

Creo que nos quedan unos 20 en este momento. Creo que las flores han estado floreciendo durante una semana o dos, realmente hermosas, todas esas cabezas moradas, que brillan tan bellamente en tan poco tiempo. 

Zo rond februari (denk ik) beginnen ze al te groeien. Eerst verse malse bladeren, lange stengels. Het lijkt dan op bleekselderij. Vooral de jonge verse stengels zijn eetbaar en hier in het dorp zijn er verschillende recepten bekend. Onze buurman noemde een paar gerechten, die zijn vrouw goed kan maken en het is ook in de groente winkel hier te koop trouwens. Zelfs in glazen potten, dus het zal vast regelmatig gegeten worden hier. Zelf heb ik het weleens deze stengels fijn gesneden en dan met een dipsaus. Maar vind het niet erg lekker. Vrij bitter. 

Around February (I think) they start to grow. Fresh tender leaves at first, long stems. It looks like celery. Especially the young fresh stems are edible and here in the village there are several recipes known. Our neighbor mentioned a few dishes that his wife can make well and it is also for sale in the vegetable shop here by the way. Even in glass jars, so it will probably be eaten regularly here. I myself have sometimes finely chopped these stems and then with a dipping sauce. But don’t like it very much. Pretty bitter. 

Alrededor de febrero (creo) empiezan a crecer. Hojas frescas y tiernas al principio, tallos largos. Parece apio. Especialmente los tallos jóvenes y frescos son comestibles y aquí en el pueblo se conocen varias recetas. Nuestro vecino mencionó algunos platos que su esposa puede preparar bien y, por cierto, también están a la venta en la tienda de verduras. Incluso en frascos de vidrio, por lo que probablemente se comerá regularmente aquí. Yo mismo he picado finamente a veces estos tallos y luego con una salsa para mojar. Pero no me gusta mucho. bastante amargo 

Maar het is natuurlijk weer wel heel gezond. Vooral dat bittere is heel goed voor de spijsvertering. 

Vanaf februari groeien ze dan langzaam op en als ik niet uitkijk, neemt het gedeeltes van de tuin over. Op sommige plekken heb ik het laten staan en heeft het een tijd een beschutte plek geboden aan de kippen en poezen. 

Maar het is ook veel werk: regelmatig haal ik de oude onderste bladeren weg, die aan het verwelken zijn en nu het binnen een paar weken over is met bloeien, zal ik er wel voor moeten zorgen, dat ik de planten verwijder, voordat de zaden zich verspreiden. Dat zijn er natuurlijk heel veel en prima om er een paar in de tuin te hebben, maar het is genoeg zo. 

Wat ik nog helemaal vergeet te vertellen is dat het natuurlijk familie is van de  artisjok en dat het zelfs zo is dat de artisjok voortkomt uit de kardoen. Ze lijken echt heel veel op elkaar. Behalve dat de artisjok veel gemakkelijker eetbaar is. 

Je zou de smaak kunnen vergelijken met een combinatie van bleekselderij en witlof. 

Het schijnt nl dat ook de bloem van de kardo op een bepaalde manier gegeten kan worden. Misschien eens uitproberen?

From February onwards, they grow slowly and if I’m not careful, they take over parts of the garden. I have left it in some places and it has offered a sheltered place to the chickens and cats for a while.

But it’s also a lot of work: I regularly remove the old lower leaves, which are wilting and now that they have finished flowering in a few weeks, I will have to make sure that I remove the plants before the seeds to spread. There are of course a lot of them and fine to have a few in the garden, but it’s enough like that.

What I completely forget to tell is that it is of course related to the artichoke and that it is even true that the artichoke originates from the cardoon. They really do look a lot alike. Except that the artichoke is much easier to eat. 

You could compare the taste with a combination of celery and chicory. 
It seems that the flower of the cardo can also be eaten in a certain way. Maybe give it a try?

Pero por supuesto es muy saludable. Especialmente ese amargo es muy bueno para la digestión.

A partir de febrero crecen lentamente y si no tengo cuidado se adueñan de partes del jardín. Lo he dejado en algunos lugares y ha ofrecido un lugar resguardado a las gallinas y gatos por un tiempo.

Pero también es mucho trabajo: regularmente quito las hojas inferiores viejas, que se están marchitando y ahora que han terminado de florecer en unas pocas semanas, tendré que asegurarme de quitar las plantas antes de que se extiendan las semillas. Por supuesto, hay muchos de ellos y está bien tener algunos en el jardín, pero es suficiente así.  

Lo que se me olvida por completo decir es que por supuesto está relacionado con la alcachofa y que incluso es cierto que la alcachofa tiene su origen en el cardo. Realmente se parecen mucho. Excepto que la alcachofa es mucho más fácil de comer. 

Podrías comparar el sabor con una combinación de apio y achicoria.

Parece que la flor del cardo también se puede comer de cierta manera. ¿Quizás darle una oportunidad?

Basilicum

We hebben een overload aan basilicum en veel planten zijn nu bloemen aan het vormen. Een paar maanden geleden had ik een bak zaden waarvan ik niet wist wat het was, basilicum dus. helemaal niet erg, we zijn er gek op hier. Dus gisteren heb ik een bos geplukt, heel licht gewassen, de bladeren van de steeltjes gehaald en de bladeren in de vriezer gelegd. Later heb ik ze er weer uitgehaald en in een zakje gedaan. Het zal vast niet dezelfde kwaliteit hebben als vers, maar het is in ieder geval iets.

So yesterday I picked a bunch, washed very lightly, removed the leaves from the stems and put the leaves in the freezer. Later I took them out again and put them in a bag. Tenemos una sobrecarga de albahaca y muchas plantas ahora están formando flores. Hace unos meses tenia un bote de semillas que no sabia que era, asi que albahaca. No está nada mal, nos encanta estar aquí. Así que ayer recogí un manojo, los lavé muy ligeramente, quité las hojas de los tallos y puse las hojas en el congelador. Luego las volví a sacar y las metí en una bolsa. Probablemente no tendrá la misma calidad que el fresco, pero al menos es algo.
